Burgundy is training professionals for the future food industry market

Burgundy Development, the Regional Development Agency and Welience, the University of Burgundy’s technology development and transfer subsidiary, are carrying out a joint prospection and promotion initiative in the framework of their partnership plan. It was in the context of this collaborative venture that we interviewed Sylvie Guyon, the R&D manager at SEVENDAY, a manufacturer of breakfast cereals for distribution brands.

Burgundy Development – Over the past two days you have been taking a European course in developing foods adapted for seniors at Welience Agroalimentaire et Bio-industriel. How do you expect to benefit from this ?

Sevenday – As SEVENDAY’s R&D Manager, I have come from Alsace to Burgundy to take a theoretical and practical course in foods for seniors. SEVENDAY is interested in this type of consumer who could become one of our future targets. We therefore wanted to get a better understanding of them so that we can adapt our products and production processes by taking part in this training.

Burgundy development – And what have you discovered about the “Baby-Boomer” profile ?

Sevenday – Over the course of the training, some dozen participants from the Burgundy academic and industrial world have worked with us. We have learnt from them that the senior citizen profile is not homogeneous, but that on the other hand, they have very specific nutritional requirements.

Burgundy Development – Following this training, how do you view its effect for the SEVENDAY R&D Department ?

Sevenday – This course has enabled me to strengthen and refine my judgement. Breakfast cereals manufactured by SEVENDAY are an excellent food medium. They can be enriched with vitamins and minerals to satisfy senior citizens’ nutritional requirements. Now it’s up to SEVENDAY to create some new products. And it’s what we did a few years ago with Welience’s industrial support, when we developed crunchy chocolate cereal clusters.
